Ms. Theodore is the author of two previous cookbooks: Jazzy Vegetarian Classics: Vegan Twists on American Family Favorites and Jazzy Vegetarian: Lively Vegan Cuisine That’s Easy and Delicious. Laura is the on-camera host of the highly successful, award-winning Jazzy Vegetarian cooking series on public television, presently available in over 90% of U.S. households nationwide. Kit Emory - EDITOR

Editors love language; singers know food—and Kit Emory divides her time between editing and professional singing. Though an omnivore by nature, Kit is drawn to vegan cuisine out of concern for the environment and a personal dedication to healthy eating. After years of balancing her singing career with a job editing journal articles for a famous neuroscientist at M.I.T., the Harvard University graduate moved to the New York area to pursue music full time. In 2003, she met Laura Theodore who showed her just how tasty and easy vegan cooking could be! From Renaissance polyphony to opera, from cathedrals to Carnegie Hall, touring throughout the United States and Europe, Kit has been fortunate to perform—and eat!—with the world’s finest musicians. Needless to say, combining a love for music, food, language and friends makes for a happy life. This is Ms. Emory’s first cookbook.

Currently practicing as a Renal RD, she has worked extensively with diabetes, gastrointestinal conditions, weight management, and vegetarian diets. Mitali has been a lifelong vegetarian and is currently the MA State Coordinator for the Vegetarian Nutrition Practice Group.

 

Victoria Moran (foreword) is listed by VegNews as one of its Top 10 Living Vegetarian Authors. Her twelve books include Main Street Vegan, Creating a Charmed Life and The Good Karma Diet.
